Za'atar: Wild, Arab, Untamed

They call it a simple spice mix—but to Palestinians, Za’atar is pure rebellion. Banned from harvesting it on Palestinian hillsides, families smuggled it like untamed freedom horses. When people taste fresh Za’atar for the first time, their senses literally glitch: piney thyme, nutty sesame, and tart sumac exploding on warm taboun bread.

This design is my tribute to that untamed freedom horse—Za’atar carried in lunchboxes, field trips, and smuggled across borders like a sacred treasure.
